What does the "First" and "Last" field operators do specifically for a field?

My best guess is that "First" returns the first occurrence of a fields history, and "last" returns the last occurrence of a field history.

Can anybody confirm this? If I'm incorrect, please fill me in on what they do exactly!

Essentially, I'm asking because I want to be able to return the most recent(last) record of a field.

Yes, First will return the first related record in a multi-value relation/array. Same is true when used within a date field. Last will return the last related record.
