By default in Application Studio, if you Preview dimensions from the Data structure, you only see the Element Caption. How can we change this to show all the attributes per element?

I agree...can only select element caption or element unique name. It would be helpful to include other attributes like "Name". You can always submit an enhancement request...I would definitely endorse it if you did.
I may be missing something here but I get selected attributes displayed in preview?
I think the difference is I'm previewing a dimension hierarchy from the database structure. From the image you're previewing an object list.
The workaround is to create a new dummy server list - which by default shows the whole dimension - and in that check your selected attribute(s).Preview on the server list gives you the above view
