Brand new user to Birst.  I am trying to set up a "Custom Set" of customers that I can edit for future reporting/dashboards.  Are there any documentations available for guidance?  I would like to begin that route before posting questions on here.

Not 100% sure what you are asking.

If you want to set up some custom data, you can make it in excel and import it and use it to make some reports/dashboards

Training is available from Infor which will guide you through the process from loading data to presenting a dashboard.

Birst isn't the easiest tool to pick up and I am not aware of any official guides but you can find the help documentation at docs.infor.com/.../latest
