Event System Insert cloud

Can anyone point me to documentation that explains how to insert data from an event  IdoOnItemInsert, into a separate IDO. 

Case: we are using a trigger in our onsite syteline to insert a header into the Opportunities table when an estimate is entered.  This is simple in sql, I hope in the event system its doable but i cannot seem to figure it out.  please help if possible
