We have one V5 essentials, 35 user SBS 2011 with Premium Add-On.
10 User OII SOP plus bespoke.
Been in since mid September with no OII issues to date.

We have a few VMWare people. At the end of the day, Opera's running on Windows Server 2008 or 2003 or whatever and is well abstracted from the hardware, be it virtual or physical. So I reckon any virtualisation solution is much of a muchness. The only place you might get issues are if the virtualised network adapters are misconfigured somehow.
