At WRC if we wish to email the candidate directly we can open the Candidate details > At a glance > Correspondence > Create email and then we can send emails without selecting an email template.

I second this; you can also send an email via the email icon on the candidate's At A Glance page (below their name and beside their email details), and then you have the option of choosing a template or free text.
