Usually an M3 install includes MDP (MetaData Publisher) which has all that information for you, consistent with the version of M3 which has been installed. I'd ask your sys admin or implementation consultants for the link and password.

We're currently using Movex v12.6F a very old predecessor to M3. Do you know if Movex has MDP or a comparable tool? I haven't had any luck finding documentation or tools that list database tables and their respective definitions.
